Courgette Bake

Courgettes
Did you know courgettes often grown to over a metre long if not harvested?

This is a an easy side dish to throw together if you fancy something a bit different. I like to have it with new potatoes and fresh fish, but it goes well with lots of dishes. I quite often make this in a single portion, but you can double, triple or quadruple for a family meal!

For one portion, you will need:

  • 1 medium courgette
  • 1 clove of garlic (or two if you’re a garlic fan!)
  • pinch of oregano
  • pinch of mixed herbs
  • a handful of grated fresh parmesan
  • olive oil
  1. Preheat your oven to 200°c.
  2. Dice your courgette and pop into a small oven proof dish.

  3. Peel your garlic and chop finely. Add it to the courgette.
  4. Throw the herbs on top and drizzle over about a tablespoon’s worth of olive oil. Mix together in the dish until the courgette slices are well coated.
  5. Grate some fresh parmesan on top (as much or as little as you like) and pop into the oven.
  6. Bake for 30-40 minutes or until the parmesan is lightly browned.
  7. Serve with your choice of mains!
